What It Means

What “Old School Chinese” Actually Means

It is a real category, not nostalgia. These are the Chinese-American dishes that took root in American cities through the twentieth century, cooked the way they were cooked before the chains standardised them.

Wok cooking, made to order

Every dish goes in the wok when you order it. Not a steam table, not a batch that has been sitting.

The classics, done properly

Moo goo gai pan. Mu shu with the pancakes. Chop suey. Egg foo young. Wor wonton. Dishes most kitchens quietly dropped.

Portions built to share

Family style, meant for a table and for leftovers the next day. That has not changed since 1982.

Forty-Four Years, One Family, Two Addresses

Autumn Court opened in 1982 and has been run by the Tang family ever since. Late in 2005 a kitchen fire closed the original location for about a year. Rather than sell or franchise, the family rebuilt and reopened on Indian School Road, where the restaurant has been ever since.

Phoenix New Times named Autumn Court Best Old-School Chinese Restaurant in its Best of Phoenix 2005 issue, calling the food “reliable, old-school faves.” Writing about the rebuilt restaurant, the paper put the continuity plainly: “Same food, different location.”

That is the difference between a restaurant that serves old school Chinese food and a restaurant that has simply been doing it the whole time.
